B/W editing?

My camera allows me to change the colour to b/w and sephia and other ways by also change the balance. As well software does. So Which way is editing. Straight out of the camera Or programs.
The reason I'm asking is would this not classifed in the editing rating system.

And how do you rate editing criteria. by anything you alter out of the camera. such as cropping and fix the colour balance.

B&W

About B$W - there are different points on B&W by the camera, if you shoot in raw - it is better to make B&W after in jpg - may be it is better before, but there is no big difference. But there are many ways how to make B&W in editing programs, simple desaturation is not the best way, thus good B&W - should be scored for editing. there are special software for B&W like http://www.powerretouche.com/Black-white_plugin_introduction.htm

I have no idea how to grade editing, if I do not see it obvious, and see nothing in a description - n/a, if I like it - grade depensds how i like it. But for me editing began, when you look through a viewfinder...
